This is totally a repost from last December, but it's totally worth it. Whenever I make these, they don't last long! They are so tasty and easy to make. They are perfect for sharing, either as an addition to a holiday party or as gifts for co-workers. That is, if you don't end up eating all of them first!

So you know when you are walking around a fall festival and the smell of roasted nuts suddenly hits your nose? And you instantly gain 13 pounds? No? Just me?? Well, I do love roasted nuts and I have never even entertained the notion that I could make them at home. Until I was browsing granola recipes and I found a good looking recipe that called for Cinnamon Roasted Almonds. Like it's totally a normal ingredient. Oh great, I thought, now I'm going to have to find a fall festival to go to so I can buy some of those so I can make granola. But then I noticed that the granola recipe explained how to make the almonds! Jackpot!! I have made 2 batches in the last week and may be addicted. And they make the house smell fabulous! So here is the recipe...
Cinnamon Roasted Almonds
1 egg white
1 teaspoon cold water
2 cups whole raw almonds
3 Tablespoons white sugar
3 Tablespoons brown sugar
1 Tablespoon ground cinnamon
1/4 teaspoon salt
Preheat your oven to 250 degrees. In a medium bowl, beat the egg white and water with a whisk until frothy.
Add the almonds and stir until they are well coated.
Mix the sugars, salt and cinnamon together and sprinkle over the nuts, stirring until they are well coated.
Spread the almonds evenly onto a baking sheet that has been lined with parchment paper or a Silpat.
Bake for 1 hour, stirring every 20 minutes. Allow to cool, then store in an airtight container.
So there you have it! They are so easy and so delicious! And they get you into the holiday spirit too! What type of holiday baking are you doing?
