Homemade Granola

Yet another repost from last holiday season, but again, totally worth it! I am probably going to make 4 or 5 batches of this stuff this weekend - both to give as gifts and for our own personal stockpile. The basic recipe is easy and tasty and you can add whatever extras in to make it even better. This recipe uses dried cranberries and some of those scrumptious cinnamon toasted almonds from the recipe I posted last week. But you could easily use whatever your family likes as add ins...blueberries, raisins, maybe sunflower seeds?


Homemade Granola with Coconut, Dried Cranberries & Almonds

4 cups rolled oats
1/2 cup shredded coconut
1/2 cup wheat germ
2 teaspoons cinnamon
1 teaspoon salt

6 Tablespoons canola oil
1/2 cup honey
1/2 cup packed brown sugar
2 teaspoons vanilla extract

1 cup chopped Cinnamon Roasted Almonds
1 cup dried cranberries

In a large bowl, mix the oats, coconut, wheat germ, salt and cinnamon together. Set aside.
In a medium bowl, whisk together the oil, honey, brown sugar and vanilla. It will be pretty thick, but that's exactly what you want.
Pour half of the honey mixture over the oat mixture. Use your hands to mix it up. After the first half of the honey mixture is well mixed, go ahead and add the rest of the honey to the oats. Make sure all of the oats are covered.
Cover 2 cookie sheets with wax paper or Silpats. Spread it all out evenly.
Bake at 250 for 30 minutes, stirring every 10 minutes.
After the granola is done, I laid out some parchment paper on my kitchen table and spread out the granola so it would cool quicker. When it is cooled, mix in the chopped almonds and dried cranberries. Store it in an airtight container.

The container I made just 5 days ago is almost completely gone at my house. We love it as cereal or as a topping for yogurt or a mix in with vanilla ice cream. YUM!
