If you are a regular reader, you know I'm a working Mom. While I am happy to be able to provide for my family, having a full time job makes being a Mom a little tricky. I have a lot of help with the girls from Adam and my Mom, but one thing I always need help with is dinner. So I'm starting a new (hopefully regular) feature called "Working Momma Dinners", highlighting some of the dinners I have found that have worked for our family.
Tonight I made Sausage and Tortellini Soup, a hearty and filling soup which only takes about 15 minutes to make. By using canned tomatoes and frozen tortellini, you can have dinner on the table in no time! I don't remember where I got this recipe from, but I have tweaked quite a few things since first making it a few months ago, so I guess I can call it my own now. :)
Sausage & Tortellini Soup
1 lb pork sausage
10 oz frozen cheese tortellini
1/2 onion, chopped
2 cloves of garlic, minced
4 cups (2 cans) of chicken stock
2 14.5 oz cans of diced tomatoes
1 8 oz can of tomato sauce
1/2 Tablespoon Italian spices
1 Tablespoon diced basil
In the bottom of a stock pot, brown the sausage with the onions and garlic. When the sausage is cooked, add the chicken stock, tomatoes, tomato sauce, Italian spices and basil. Bring to a boil. Add the tortellini and continue to boil until the tortellini rise to the top. It's done!!
We sprinkle shredded mozzarella over the soup and serve it with garlic bread. It's perfect for a chilly winter day!
